Ingredients
- Large flour tortillas
- Fresh large eggs
- Crispy bacon or breakfast sausage
- Bell peppers
- Onions
- Mushrooms (optional)
- Shredded cheddar cheese
- Monterey Jack cheese
- Fresh cilantro
- Cumin
- Salt and pepper
Instructions
- Cook the meat in a large skillet over medium heat until crispy. Remove from the pan and set aside.
- Sauté diced onions and bell peppers in the same skillet until soft. If using mushrooms, add them after the onions are translucent.
- Whisk eggs with salt, pepper, and cumin, then pour into the skillet and scramble until fluffy.
- Combine the eggs, meat, and herbs. Let filling cool slightly.
- On each tortilla, add a scoop of filling and a sprinkle of cheese.
- Fold burritos by bringing in the sides and rolling tightly. Place seam-side down on a parchment-lined baking sheet.
- Freeze until solid, then transfer to freezer-safe bags.
- To reheat, microwave for 2-3 minutes or bake at 350°F for 20-25 minutes.
Notes
Avoid overfilling the burritos to prevent mess. Let the filling cool completely before wrapping to prevent sogginess.
