Ingredients

  • Large flour tortillas
  • Fresh large eggs
  • Crispy bacon or breakfast sausage
  • Bell peppers
  • Onions
  • Mushrooms (optional)
  • Shredded cheddar cheese
  • Monterey Jack cheese
  • Fresh cilantro
  • Cumin
  • Salt and pepper

Instructions

  1. Cook the meat in a large skillet over medium heat until crispy. Remove from the pan and set aside.
  2. Sauté diced onions and bell peppers in the same skillet until soft. If using mushrooms, add them after the onions are translucent.
  3. Whisk eggs with salt, pepper, and cumin, then pour into the skillet and scramble until fluffy.
  4. Combine the eggs, meat, and herbs. Let filling cool slightly.
  5. On each tortilla, add a scoop of filling and a sprinkle of cheese.
  6. Fold burritos by bringing in the sides and rolling tightly. Place seam-side down on a parchment-lined baking sheet.
  7. Freeze until solid, then transfer to freezer-safe bags.
  8. To reheat, microwave for 2-3 minutes or bake at 350°F for 20-25 minutes.

Notes
