- 4 bone-in, skin-on chicken thighs
- 1 cup apple cider
- 4 cloves garlic, minced
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 tablespoons butter or olive oil
- 1 onion, chopped
- 2 apples, sliced (Granny Smith or Honeycrisp)
- 1 cup chicken broth
Instructions
- Melt butter in a large skillet over medium heat. Add chopped onions and sauté until soft, around 3-4 minutes. Stir in minced garlic and cook until fragrant, about 1 minute more.
- Season chicken with salt and pepper, then sear skin-side down in the skillet until golden brown, roughly 5-6 minutes. Flip and sear the other side for another 3-4 minutes.
- Remove chicken, add sliced apples to the skillet, and sauté for 2-3 minutes. Pour in apple cider and chicken broth, scraping up any bits from the pan.
- Return chicken to the skillet, add thyme and rosemary, cover, and simmer on low for 30-35 minutes until chicken is cooked through.
- Remove chicken, increase heat to medium-high, and reduce the sauce for a few minutes to thicken, then return chicken to the skillet to glaze.
- Serve warm, best paired with crusty French bread or mashed potatoes.
Notes
Allow chicken to rest before serving for optimal juiciness. Pair with sautéed green beans for a refreshing side.
