Ingredients
- Chicken (thighs or breasts)
- Apple cider
- Butter
- Onion
- Garlic
- Fresh thyme
- Fresh rosemary
- Chicken broth
- Salt
- Pepper
Instructions
- Season chicken with salt and pepper. Heat butter in a skillet, add chicken skin-side down, and cook until golden brown (6-8 minutes). Flip and cook for another 4-5 minutes; set aside.
- Add diced onions to the skillet and sauté for 5 minutes until softened. Add minced garlic and cook for an additional minute.
- Pour in apple cider, scraping up the brown bits, and bring to a gentle simmer.
- Add chicken back to the skillet, pour in chicken broth, add herbs, cover, and simmer for 25-30 minutes.
- Remove chicken, let rest, then boil sauce to thicken for 5-10 minutes. Serve sauce over chicken.
Notes
For a lighter option, use skinless chicken breasts. Feel free to experiment with different herbs.
