French Apple Cider Chicken

Ingredients

  • Chicken (thighs or breasts)
  • Apple cider
  • Butter
  • Onion
  • Garlic
  • Fresh thyme
  • Fresh rosemary
  • Chicken broth
  • Salt
  • Pepper

Instructions

  1. Season chicken with salt and pepper. Heat butter in a skillet, add chicken skin-side down, and cook until golden brown (6-8 minutes). Flip and cook for another 4-5 minutes; set aside.
  2. Add diced onions to the skillet and sauté for 5 minutes until softened. Add minced garlic and cook for an additional minute.
  3. Pour in apple cider, scraping up the brown bits, and bring to a gentle simmer.
  4. Add chicken back to the skillet, pour in chicken broth, add herbs, cover, and simmer for 25-30 minutes.
  5. Remove chicken, let rest, then boil sauce to thicken for 5-10 minutes. Serve sauce over chicken.

Notes

For a lighter option, use skinless chicken breasts. Feel free to experiment with different herbs.
