A delicious blend of tender beef, sautéed mushrooms, and melted cheese encased in flaky pastry, served with a savory jus for dipping.

- 1 lb beef chuck roast (or flank steak)
- 8 oz cremini mushrooms, sliced
- 1 large sweet onion, sliced
- 3 cloves garlic, minced
- 1 cup Swiss or provolone cheese, shredded
- 1 tablespoon fresh thyme (or rosemary)
- 1 sheet buttery puff pastry
- 1 cup low-sodium beef broth
- 1 tablespoon olive oil
- 1 beaten egg (for brushing)
Instructions
- In a large skillet, heat olive oil over medium heat. Add sliced onions and cook until caramelized, about 15 minutes. Add minced garlic and sliced mushrooms, cooking until tender.
- In a pot, sear the beef until evenly browned. Shred and add to the mushroom and onion mixture. Pour in beef broth and herbs, simmer for about 20 minutes.
- Preheat oven to 400°F (200°C). Roll out the pastry dough, cut into squares, and fill with beef mixture. Top with cheese, fold, and seal edges. Brush with beaten egg.
- Place on a baking sheet and bake for 20-25 minutes or until golden brown.
- Meanwhile, heat remaining beef broth with herbs in a small saucepan to prepare the jus. Season to taste.
- Serve the hot French Dip Squares with the warm jus for dipping.
Notes
Feel free to substitute the beef for a plant-based option like lentils for a vegetarian twist. Experiment with different cheeses and add greens for extra nutrition.
