- 2 lbs Beef Chuck Roast, cut into bite-sized pieces
- 4 Yellow Onions, sliced
- 4 cloves Garlic, minced
- 4 cups Beef Broth (low-sodium)
- 2 sprigs Fresh Thyme
- 2 Bay Leaves
- 2 Carrots, chopped
- 2 Potatoes, diced
- 1 cup Gruyère Cheese, shredded
- 4 slices Crusty French Baguette
- Olive Oil
- Salt and Pepper to taste
Instructions
- In a large, heavy pot, heat olive oil over medium heat. Add the sliced onions and sprinkle with a pinch of salt. Cook until caramelized and golden brown, about 20-25 minutes.
- Push the onions to one side and add the beef. Brown on all sides, then mix with the onions.
- Stir in minced garlic and sauté for about a minute before adding beef broth. Scrape up any bits stuck to the pot.
- Add thyme, bay leaves, carrots, and potatoes. Season with salt and pepper; bring to a boil, then reduce heat and simmer for 90-120 minutes, stirring occasionally until beef is tender.
- Preheat oven to 425°F (220°C). Once stew is thick and flavorful, slice bread and arrange over the stew. Top with shredded cheese and bake until bubbly and golden, about 10-15 minutes.
- Let cool for a few minutes before serving. Enjoy with a salad or steamed greens on the side.
Notes
Feel free to experiment with different cheeses for the topping, and consider adding mushrooms for additional flavor. Adjust seasoning as needed.
