French Onion Beef Stew with Cheesy Bread Topping

Ingredients

  • 2 lbs Beef Chuck Roast, cut into bite-sized pieces
  • 4 Yellow Onions, sliced
  • 4 cloves Garlic, minced
  • 4 cups Beef Broth (low-sodium)
  • 2 sprigs Fresh Thyme
  • 2 Bay Leaves
  • 2 Carrots, chopped
  • 2 Potatoes, diced
  • 1 cup Gruyère Cheese, shredded
  • 4 slices Crusty French Baguette
  • Olive Oil
  • Salt and Pepper to taste

Instructions

  1. In a large, heavy pot, heat olive oil over medium heat. Add the sliced onions and sprinkle with a pinch of salt. Cook until caramelized and golden brown, about 20-25 minutes.
  2. Push the onions to one side and add the beef. Brown on all sides, then mix with the onions.
  3. Stir in minced garlic and sauté for about a minute before adding beef broth. Scrape up any bits stuck to the pot.
  4. Add thyme, bay leaves, carrots, and potatoes. Season with salt and pepper; bring to a boil, then reduce heat and simmer for 90-120 minutes, stirring occasionally until beef is tender.
  5. Preheat oven to 425°F (220°C). Once stew is thick and flavorful, slice bread and arrange over the stew. Top with shredded cheese and bake until bubbly and golden, about 10-15 minutes.
  6. Let cool for a few minutes before serving. Enjoy with a salad or steamed greens on the side.

Notes

Feel free to experiment with different cheeses for the topping, and consider adding mushrooms for additional flavor. Adjust seasoning as needed.
