French Pear & Almond Pithivier

Description

A delightful pastry filled with sweet pears and rich almond cream, encased in a flaky, golden puff pastry.


Ingredients

  • 1 package puff pastry
  • 4 ripe pears (Bartlett or Bosc)
  • 7 oz almond paste
  • 4 tbsp butter, softened
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Roll out the puff pastry on a lightly floured surface and cut into two circles, about 10 inches in diameter.
  2. In a bowl, mix the almond paste, softened butter, and sugar until smooth. Stir in the egg and vanilla extract.
  3. Peel, core, and slice the pears thinly, then gently fold them into the almond mixture.
  4. Place one pastry circle on a baking sheet lined with parchment paper. Spread the filling in the center, leaving edges clear.
  5. Carefully place the second pastry circle on top, sealing the edges by pressing with fingers and crimping with a fork.
  6. Beat the remaining egg and brush it on top for a golden finish.
  7. Make decorative slits on top to allow steam to escape.
  8. Preheat the oven to 400°F (200°C) and bake for 35-40 minutes until golden and puffed.
  9. Let cool slightly before dusting with powdered sugar and slicing.

Notes

Serve warm with whipped cream or vanilla ice cream. Great for gatherings!
