Ingredients

  • 1 cup frika (cracked wheat)
  • 2 cups waxy potatoes (like Yukon Gold), diced
  • 1 cup sharp cheddar cheese, shredded
  • 1 medium yellow onion, diced
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish

Instructions

  1. Soak the frika in warm water for about 20 minutes, then drain and set aside.
  2. Wash and peel the potatoes, then chop them into small cubes. Dice the onion finely.
  3. In a large skillet, heat the olive oil or butter over medium heat. Add the diced onions and cook until soft and translucent, about 5–7 minutes.
  4. Add the cubed potatoes, season with salt and pepper, and stir well. Cover the skillet to let the potatoes steam for about 10 minutes, stirring occasionally.
  5. Once the potatoes are tender, mix in the soaked frika and stir everything together. Cook for another 5–7 minutes until heated through.
  6. Sprinkle the shredded cheese on top and gently fold it into the hash until melted.
  7. Remove from heat and finish with fresh herbs before serving.
  8. Spoon onto plates and enjoy!
