Ingredients

- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 1 cup mixed fresh fruits (strawberries, blueberries, peaches, etc.)
- 1 cup graham cracker crumbs
- 1/4 cup melted butter
Instructions
- Prepare the crust: Mix graham cracker crumbs and melted butter until resembling wet sand. Press into mini muffin tins and chill for 15 minutes.
- Make the cheesecake filling: Beat cream cheese and sugar until smooth, add vanilla extract and heavy cream, and blend until airy.
- Add the fruits: Fold in chopped fruits and reserve some for topping.
- Fill the molds: Spoon cheesecake mixture into crusts, smooth out the tops.
- Chill until firm: Refrigerate for at least 4 hours or overnight.
- Unmold and serve: Remove from molds and top with fresh fruit or a drizzle of chocolate/caramel.
Notes
