Description

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • 1 cup mixed fresh fruits (strawberries, blueberries, peaches, etc.)
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter

Instructions

  1. Prepare the crust: Mix graham cracker crumbs and melted butter until resembling wet sand. Press into mini muffin tins and chill for 15 minutes.
  2. Make the cheesecake filling: Beat cream cheese and sugar until smooth, add vanilla extract and heavy cream, and blend until airy.
  3. Add the fruits: Fold in chopped fruits and reserve some for topping.
  4. Fill the molds: Spoon cheesecake mixture into crusts, smooth out the tops.
  5. Chill until firm: Refrigerate for at least 4 hours or overnight.
  6. Unmold and serve: Remove from molds and top with fresh fruit or a drizzle of chocolate/caramel.
