Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat the softened butter and sugar together until fluffy, about 2-3 minutes.
  3. Add in the eggs and vanilla extract, mixing until well combined.
  4. Gradually add in the flour and baking powder, mixing gently until a soft dough forms.
  5. Divide the dough into two or three equal parts.
  6. Add food coloring to each portion and knead until evenly distributed.
  7. Roll out each colored dough into rectangles about 1/4 inch thick.
  8. Layer the colored doughs on top of each other and gently press down.
  9. Carefully roll the layered dough into a log using wax paper to guide it.
  10. Wrap the log in wax paper and chill in the refrigerator for about 30 minutes.
  11. Slice the chilled dough into 1/4 inch thick rounds and place them on a lined baking sheet.
  12. Bake for about 10-12 minutes until edges are lightly golden.
  13. Allow to cool on the sheet for 5 minutes before transferring to a cooling rack.

Notes

Feel free to drizzle melted chocolate on top for an extra layer of sweetness.
