Ingredients

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- Food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, beat the softened butter and sugar together until fluffy, about 2-3 minutes.
- Add in the eggs and vanilla extract, mixing until well combined.
- Gradually add in the flour and baking powder, mixing gently until a soft dough forms.
- Divide the dough into two or three equal parts.
- Add food coloring to each portion and knead until evenly distributed.
- Roll out each colored dough into rectangles about 1/4 inch thick.
- Layer the colored doughs on top of each other and gently press down.
- Carefully roll the layered dough into a log using wax paper to guide it.
- Wrap the log in wax paper and chill in the refrigerator for about 30 minutes.
- Slice the chilled dough into 1/4 inch thick rounds and place them on a lined baking sheet.
- Bake for about 10-12 minutes until edges are lightly golden.
- Allow to cool on the sheet for 5 minutes before transferring to a cooling rack.
Notes
Feel free to drizzle melted chocolate on top for an extra layer of sweetness.
