Instructions
- Cream together the softened unsalted butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract; mix until well combined.
- Gradually add the flour mixed with baking powder, stirring until the dough forms a cohesive mass.
- Divide the dough into two equal parts and flatten each into a rectangle, about 1/2 inch thick.
- Spread your chosen filling on each rectangle, leaving a small border around the edges.
- Roll each rectangle into a log from the long side to form the pinwheel shape.
- Wrap each log in parchment paper and chill in the refrigerator for at least one hour.
- Preheat the oven to 350°F (175°C). Slice the chilled dough into rounds about 1/4-inch thick and place on a parchment-lined baking sheet.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool for a few minutes before transferring to wire racks to cool completely.
Notes
For a dairy-free version, substitute coconut oil for butter. Use gluten-free flour blends for gluten-free cookies.
