Instructions

  1. Cream together the softened unsalted butter and granulated sugar until light and fluffy.
  2. Add the egg and vanilla extract; mix until well combined.
  3. Gradually add the flour mixed with baking powder, stirring until the dough forms a cohesive mass.
  4. Divide the dough into two equal parts and flatten each into a rectangle, about 1/2 inch thick.
  5. Spread your chosen filling on each rectangle, leaving a small border around the edges.
  6. Roll each rectangle into a log from the long side to form the pinwheel shape.
  7. Wrap each log in parchment paper and chill in the refrigerator for at least one hour.
  8. Preheat the oven to 350°F (175°C). Slice the chilled dough into rounds about 1/4-inch thick and place on a parchment-lined baking sheet.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
