  • 1 cup buttermilk
  • 2 large eggs

  • 1 teaspoon vanilla extract
  • 1/2 cup rainbow sprinkles

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 12-cup muffin tin or line with baking cups.
  3. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  4. In another bowl, mix the buttermilk, melted butter, eggs, and vanilla extract.
  5. Pour the wet mixture into the dry ingredients and stir gently to combine.
  6. Fold in the rainbow sprinkles.
  7. Fill muffin cups about 2/3 full.
  8. Bake for 18–20 minutes or until golden brown and a toothpick comes out clean.
  9. Cool in the tin for about 5 minutes before transferring to a cooling rack.
  10. Serve warm and enjoy!

Notes

For a gluten-free version, substitute almond flour. You can also use coconut milk instead of buttermilk for a dairy-free option.
