- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup rainbow sprinkles
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a 12-cup muffin tin or line with baking cups.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, mix the buttermilk, melted butter, eggs, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir gently to combine.
- Fold in the rainbow sprinkles.
- Fill muffin cups about 2/3 full.
- Bake for 18–20 minutes or until golden brown and a toothpick comes out clean.
- Cool in the tin for about 5 minutes before transferring to a cooling rack.
- Serve warm and enjoy!
Notes
For a gluten-free version, substitute almond flour. You can also use coconut milk instead of buttermilk for a dairy-free option.
