Ingredients

  • 2 boneless chicken breasts (or thighs)
  • 4 tablespoons butter
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 8 ounces linguine
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Season chicken with salt, pepper, and 2 minced garlic cloves. Let marinate for at least 15 minutes.
  2. Cook linguine in salted water until al dente. Reserve a cup of pasta water, then drain the rest.
  3. Melt 2 tablespoons butter in a skillet over medium heat. Cook marinated chicken for 6-7 minutes per side until golden brown and cooked through. Remove and let rest.
  4. Add remaining butter to the skillet, then sauté remaining garlic until fragrant but not burnt.
  5. Pour in heavy cream, bring to a simmer, and stir in Parmesan cheese until melted and combined.
  6. Add reserved pasta water to adjust sauce consistency as desired.
  7. Toss in the linguine, mix gently with the sauce, and slice the rested chicken to lay atop. Garnish with parsley.
  8. Adjust seasoning if needed and serve immediately.

Notes

For a lighter version, substitute chicken broth for cream. Pair with a crisp salad or garlic bread for a complete meal.
