- 2 boneless chicken breasts (or thighs)
- 4 tablespoons butter
- 4 cloves fresh garlic, minced
- 1 cup heavy cream
- 1 cup Parmesan cheese, grated
- 8 ounces linguine
- Fresh parsley, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Season chicken with salt, pepper, and 2 minced garlic cloves. Let marinate for at least 15 minutes.
- Cook linguine in salted water until al dente. Reserve a cup of pasta water, then drain the rest.
- Melt 2 tablespoons butter in a skillet over medium heat. Cook marinated chicken for 6-7 minutes per side until golden brown and cooked through. Remove and let rest.
- Add remaining butter to the skillet, then sauté remaining garlic until fragrant but not burnt.
- Pour in heavy cream, bring to a simmer, and stir in Parmesan cheese until melted and combined.
- Add reserved pasta water to adjust sauce consistency as desired.
- Toss in the linguine, mix gently with the sauce, and slice the rested chicken to lay atop. Garnish with parsley.
- Adjust seasoning if needed and serve immediately.
Notes
For a lighter version, substitute chicken broth for cream. Pair with a crisp salad or garlic bread for a complete meal.
