A comforting and indulgent Garlic Butter Roast Chicken that brings family together over shared meals.

- 1 whole chicken or chicken pieces
- 1/2 cup unsalted butter
- 6 cloves garlic, minced
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh rosemary, chopped
- Juice of 1 lemon
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Pat dry your chicken with paper towels.
- In a saucepan over medium heat, melt the butter. Add minced garlic and cook until fragrant. Remove from heat and stir in herbs and salt.
- Season the chicken generously inside and out with salt and pepper. Pour the garlic butter all over the chicken, ensuring it gets under the skin.
- Roast in the oven for approximately 1 to 1.5 hours, basting occasionally with the pan juices.
- Check for doneness with a meat thermometer in the thigh, it should read 165°F (75°C).
- Allow to rest for about 15 minutes before carving.
Notes
Serve with crusty bread or as part of a festive meal. Save drippings for gravy.
