A comforting and indulgent Garlic Butter Roast Chicken that brings family together over shared meals.


Ingredients

  • 1 whole chicken or chicken pieces
  • 1/2 cup unsalted butter
  • 6 cloves garlic, minced
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • Juice of 1 lemon
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat dry your chicken with paper towels.
  3. In a saucepan over medium heat, melt the butter. Add minced garlic and cook until fragrant. Remove from heat and stir in herbs and salt.
  4. Season the chicken generously inside and out with salt and pepper. Pour the garlic butter all over the chicken, ensuring it gets under the skin.
  5. Roast in the oven for approximately 1 to 1.5 hours, basting occasionally with the pan juices.
  6. Check for doneness with a meat thermometer in the thigh, it should read 165°F (75°C).
  7. Allow to rest for about 15 minutes before carving.

Notes

Serve with crusty bread or as part of a festive meal. Save drippings for gravy.
