- 4 boneless chicken thighs or breasts
- 4 large carrots, chopped
- 4 cloves fresh garlic, minced
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 cup chicken broth (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Pat chicken pieces dry and season with salt, pepper, and chopped herbs. Marinate for at least 30 minutes if possible.
- In a large skillet over medium heat, drizzle olive oil and sauté minced garlic for 1-2 minutes until fragrant.
- Increase heat and add chicken, searing for 4-5 minutes on each side until golden brown.
- Add chopped carrots and remaining herbs, stirring to combine.
- Transfer skillet to preheated oven or move to a baking dish and bake for 25-30 minutes until chicken is cooked through and carrots are tender.
- Before serving, squeeze fresh lemon juice over the dish for added brightness.
Notes
Let chicken rest before cutting for tenderness. Don’t overcrowd the skillet to achieve an even sear.
