Description

Ingredients

  • 4 boneless chicken thighs or breasts
  • 4 large carrots, chopped
  • 4 cloves fresh garlic, minced
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup chicken broth (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat chicken pieces dry and season with salt, pepper, and chopped herbs. Marinate for at least 30 minutes if possible.
  3. In a large skillet over medium heat, drizzle olive oil and sauté minced garlic for 1-2 minutes until fragrant.
  4. Increase heat and add chicken, searing for 4-5 minutes on each side until golden brown.
  5. Add chopped carrots and remaining herbs, stirring to combine.
  6. Transfer skillet to preheated oven or move to a baking dish and bake for 25-30 minutes until chicken is cooked through and carrots are tender.
  7. Before serving, squeeze fresh lemon juice over the dish for added brightness.

Notes

Let chicken rest before cutting for tenderness. Don’t overcrowd the skillet to achieve an even sear.
