A comforting and flavorful meatloaf packed with garlic, Parmesan, and fresh herbs, perfect for family dinners.


Ingredients

  • 12 pounds ground chicken
  • 23 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup breadcrumbs (plain or Italian)
  • 1 cup grated Parmesan cheese
  • 2 large eggs
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh basil, chopped
  • ¼ cup milk
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat a drizzle of olive oil over medium heat. Add minced garlic and chopped onion. Sauté until the onion is translucent.
  3. In a large mixing bowl, combine ground chicken, sautéed garlic and onion, breadcrumbs, grated Parmesan, eggs, parsley, basil, and milk. Season with salt and pepper.
  4. Mix gently to combine, then shape the mixture into a loaf and place it on a baking sheet lined with parchment paper.
  5. Sprinkle additional Parmesan cheese on top for a crispy crust.
  6. Bake for 50-60 minutes or until the internal temperature reaches 165°F (74°C).
  7. Let the meatloaf rest for 10 minutes before slicing.

Notes

You can substitute ground turkey for ground chicken or use almond flour for a gluten-free version. Allowing the meatloaf to rest after baking will improve its juiciness.
