Ingredients

- 1–2 pounds ground chicken
- 2–3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup breadcrumbs (plain or Italian)
- 1 cup grated Parmesan cheese
- 2 large eggs
- ¼ cup fresh parsley, chopped
- ¼ cup fresh basil, chopped
- ¼ cup milk
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat a drizzle of olive oil over medium heat. Add minced garlic and chopped onion. Sauté until the onion is translucent.
- In a large mixing bowl, combine ground chicken, sautéed garlic and onion, breadcrumbs, grated Parmesan, eggs, parsley, basil, and milk. Season with salt and pepper.
- Mix gently to combine, then shape the mixture into a loaf and place it on a baking sheet lined with parchment paper.
- Sprinkle additional Parmesan cheese on top for a crispy crust.
- Bake for 50-60 minutes or until the internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for 10 minutes before slicing.
Notes
You can substitute ground turkey for ground chicken or use almond flour for a gluten-free version. Allowing the meatloaf to rest after baking will improve its juiciness.
