  • 2 pounds Yukon Gold or red-skinned potatoes
  • 4 cloves fresh garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 4 tablespoons butter or olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon dried herbs (optional)
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the potatoes into even-sized pieces (about 1 inch each).
  3. Melt butter or heat olive oil in a large bowl, then add minced garlic.
  4. Add the potatoes to the bowl and toss until coated; season with salt, pepper, and herbs.
  5. Spread the potatoes on a baking sheet lined with parchment paper.
  6. Roast for 25-30 minutes, flipping halfway through until golden brown and crispy.
  7. Five minutes before finishing, sprinkle with Parmesan cheese and return to the oven.
