Description

A comforting and flavorful side dish of creamy roasted potatoes infused with garlic and topped with Parmesan cheese.


Ingredients

  • 2 pounds potatoes (Russet or Yukon Gold)
  • 4 cloves garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (parsley, chives, or thyme) for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel (if desired) the potatoes, then cut them into even cubes, about 1 to 1.5 inches.
  3. Mince the garlic cloves finely.
  4. In a large bowl, combine potato cubes, minced garlic, Parmesan cheese, melted butter, and olive oil. Toss to coat evenly.
  5. Season with salt and pepper to taste.
  6. Spread the mixture on a parchment-lined baking sheet in a single layer.
  7. Bake for about 25-30 minutes, flipping halfway through, until golden brown and crispy.
  8. Remove from the oven and sprinkle with freshly chopped herbs. Serve hot.
