Ingredients

  • 1 medium zucchini, chopped

  • Fresh herbs (basil, thyme, or parsley), for garnish

Instructions

  1. Prep your ingredients: Wash and chop all your veggies into bite-sized pieces. Keep garlic cloves whole or mince them.
  2. Heat the skillet: Place your skillet on medium heat and add olive oil or butter until bubbly.
  3. Sauté the garlic: Add garlic to the hot oil and let it sauté for about 30 seconds until fragrant.
  4. Add the vegetables: Toss in bell peppers and mushrooms, stirring to coat in the garlic oil. After a few minutes, add the zucchini.
  5. Season and sauté: Once the vegetables are tender, season with salt and pepper. Optionally, add red pepper flakes for heat.
  6. Finish with fresh herbs: Just before serving, stir in fresh herbs for an aromatic touch.
