Description
A festive Ginger Bread Yule Log Cake infused with warm spices and enveloped in rich chocolate ganache, perfect for holiday gatherings.

- 1 cup all-purpose flour
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 4 large eggs
- 1/2 cup unsalted butter, softened
- 1/4 cup honey or molasses
- 1 cup heavy cream
- 8 oz chocolate, chopped (for ganache)
Instructions
- Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- In a medium bowl, whisk together flour, ginger, cinnamon, baking powder, and baking soda.
- In a large bowl, cream together the butter and sugars until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Gradually add the dry ingredients to the wet mixture, alternating with honey or molasses until fully combined.
- Pour batter into the prepared pan and spread evenly. Bake for 20-25 minutes until a toothpick comes out clean.
- Turn the cake out onto a towel dusted with powdered sugar and roll it up gently. Allow it to cool completely.
- Whip the cream until soft peaks form. Unroll the cooled cake and spread whipped cream evenly. Roll it back up.
- Heat heavy cream until simmering and pour over chopped chocolate. Stir until smooth to create ganache.
- Place rolled cake seam-side down on a serving platter and pour ganache over the top. Decorate as desired and dust with powdered sugar.
Notes
For a dairy-free version, replace butter with coconut oil and cream with almond milk. Customize with nuts or dried fruits as desired.
