Description

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 4 large eggs
  • 1/2 cup unsalted butter, softened
  • 1/4 cup honey or molasses
  • 1 cup heavy cream
  • 8 oz chocolate, chopped (for ganache)

Instructions

  1. Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a medium bowl, whisk together flour, ginger, cinnamon, baking powder, and baking soda.
  3. In a large bowl, cream together the butter and sugars until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Gradually add the dry ingredients to the wet mixture, alternating with honey or molasses until fully combined.
  6. Pour batter into the prepared pan and spread evenly. Bake for 20-25 minutes until a toothpick comes out clean.
  7. Turn the cake out onto a towel dusted with powdered sugar and roll it up gently. Allow it to cool completely.
  8. Whip the cream until soft peaks form. Unroll the cooled cake and spread whipped cream evenly. Roll it back up.
  9. Heat heavy cream until simmering and pour over chopped chocolate. Stir until smooth to create ganache.
  10. Place rolled cake seam-side down on a serving platter and pour ganache over the top. Decorate as desired and dust with powdered sugar.

Notes

For a dairy-free version, replace butter with coconut oil and cream with almond milk. Customize with nuts or dried fruits as desired.
