Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 15×10-inch jelly roll pan with parchment paper and lightly grease it.
  3. In a bowl, whisk together flour, baking powder, baking soda, and spices.
  4. In another large bowl, combine sugar, molasses, oil, eggs, and vanilla, mixing until smooth.
  5. Gradually fold the dry ingredients into the wet mixture, stirring just until combined.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for about 12-15 minutes until golden and a toothpick comes out clean.
  8. Turn the cake onto a powdered sugar-dusted towel and roll it tightly while warm.
  9. Prepare the frosting and unroll the cake to spread frosting on top, then re-roll it.
