  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg

  • 1 cup dark molasses
  • ½ cup softened butter
  • 2 eggs
  • 1 tablespoon freshly grated ginger
  • 8 ounces softened cream cheese
  • ¼ cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan, lining it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, beat together the cream cheese, granulated sugar, and one egg until smooth.
  4. In a large bowl, mix the molasses, softened butter, eggs, and grated ginger until combined.
  5. Gradually fold the dry mixture into the wet mixture until just combined.
  6. Layer half of the batter into the loaf pan, dollop with half of the cream cheese mixture, and use a knife to swirl. Repeat with the remaining batter and cream cheese.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For lighter options, you can use low-fat cream cheese. If missing fresh ginger, substitute with ground ginger.
