- 1/2 cup brown sugar, packed
- 1/2 cup granulated sugar
- 3/4 cup molasses
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup cream cheese (for filling)
- 1 cup powdered sugar (for filling)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, ground ginger, cinnamon, baking soda, and salt.
- In a larger bowl, beat together butter, brown sugar, and granulated sugar until light and fluffy.
- Add molasses, egg, and vanilla, mixing until well combined.
- Gradually add the dry mixture to the wet, stirring until just combined.
- Scoop equal portions of dough onto the baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until the edges are golden but centers are still soft. Cool on the tray for a few minutes before transferring to a wire rack.
- For filling, whip together cream cheese, powdered sugar, and a touch of vanilla.
- Once cookies are cooled, spread or pipe filling between two cookies to make sandwiches.
