  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 3/4 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese (for filling)
  • 1 cup powdered sugar (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, ground ginger, cinnamon, baking soda, and salt.
  3. In a larger bowl, beat together butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add molasses, egg, and vanilla, mixing until well combined.
  5. Gradually add the dry mixture to the wet, stirring until just combined.
  6. Scoop equal portions of dough onto the baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until the edges are golden but centers are still soft. Cool on the tray for a few minutes before transferring to a wire rack.
  8. For filling, whip together cream cheese, powdered sugar, and a touch of vanilla.
  9. Once cookies are cooled, spread or pipe filling between two cookies to make sandwiches.
