Ingredients

  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 1/2 cup butter, softened
  • 1 egg
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the oats, flour, spices, and baking soda.
  3. Cream together the softened butter, brown sugar, and molasses until light and fluffy.
  4. Add the egg to the butter mixture and blend well.
  5. Gradually add the dry mixture to the wet ingredients, stirring just until combined.
  6. Use a cookie scoop to drop rounded tablespoons of dough onto a parchment-lined baking sheet.
  7. Bake for 10-12 minutes until the edges are golden and centers are slightly soft.
  8. Allow to cool slightly on the baking sheet before transferring to wire racks to cool completely.
