Ingredients
Scale
- 2 cups gluten-free flour blend
- 1 packet active dry yeast
- 1 cup warm water (about 110°F)
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- Fresh rosemary or thyme (to taste)
- Sugar (for yeast activation)
Instructions
- In a small bowl, combine warm water and sugar, then sprinkle yeast over the top and let sit for 5–10 minutes until frothy.
- In a large bowl, whisk together gluten-free flour blend, sea salt, and any dried herbs.
- Add the frothy yeast mixture and olive oil to the dry ingredients and mix until combined.
- Cover the bowl with a kitchen towel and let the dough rise in a warm spot for about 60 minutes.
- Grease a baking dish, gently spread the dough into it, and let rise for another 30 minutes while preheating the oven to 425°F.
- Create dimples in the risen dough, drizzle with olive oil, and sprinkle more salt and herbs.
- Bake for 25–30 minutes or until golden brown.
- Allow to cool for a few minutes, then slice and serve warm.
Notes
This focaccia bread can be paired with soups or used for sandwiches. You can also freeze leftovers for up to three months.
