Description

A delightful and inviting gluten-free focaccia bread, infused with fresh herbs and perfect for any meal.


Ingredients

  • 2 cups gluten-free flour blend
  • 1 packet active dry yeast
  • 1 cup warm water (about 110°F)
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • Fresh rosemary or thyme (to taste)
  • Sugar (for yeast activation)

Instructions

  1. In a small bowl, combine warm water and sugar, then sprinkle yeast over the top and let sit for 5–10 minutes until frothy.
  2. In a large bowl, whisk together gluten-free flour blend, sea salt, and any dried herbs.
  3. Add the frothy yeast mixture and olive oil to the dry ingredients and mix until combined.
  4. Cover the bowl with a kitchen towel and let the dough rise in a warm spot for about 60 minutes.
  5. Grease a baking dish, gently spread the dough into it, and let rise for another 30 minutes while preheating the oven to 425°F.
  6. Create dimples in the risen dough, drizzle with olive oil, and sprinkle more salt and herbs.
  7. Bake for 25–30 minutes or until golden brown.
  8. Allow to cool for a few minutes, then slice and serve warm.

Notes

This focaccia bread can be paired with soups or used for sandwiches. You can also freeze leftovers for up to three months.
