- 1 whole sea bream, cleaned
- 4 cloves fresh garlic, minced
- 2 lemons, zested and juiced
- 1/4 cup extra virgin olive oil
- 1/4 cup fresh oregano, chopped
- Salt and pepper, to taste
- 1 bell pepper, chopped
- 1 zucchini, chopped
- 1 red onion, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the sea bream under cold water and pat dry with paper towels.
- In a bowl, mix minced garlic, lemon zest, lemon juice, olive oil, chopped oregano, salt, and pepper.
- Marinate the fish in the mixture for about 30 minutes.
- Chop the seasonal vegetables and toss them in olive oil, salt, and pepper.
- Place the marinated fish on a baking sheet alongside the vegetables.
- Roast in the preheated oven for 25-30 minutes or until the fish flakes easily with a fork.
- Serve with additional lemon wedges and a drizzle of olive oil.
