Ingredients

  • 1 whole sea bream, cleaned
  • 4 cloves fresh garlic, minced
  • 2 lemons, zested and juiced
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh oregano, chopped
  • Salt and pepper, to taste
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 red onion, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the sea bream under cold water and pat dry with paper towels.
  3. In a bowl, mix minced garlic, lemon zest, lemon juice, olive oil, chopped oregano, salt, and pepper.
  4. Marinate the fish in the mixture for about 30 minutes.
  5. Chop the seasonal vegetables and toss them in olive oil, salt, and pepper.
  6. Place the marinated fish on a baking sheet alongside the vegetables.
  7. Roast in the preheated oven for 25-30 minutes or until the fish flakes easily with a fork.
  8. Serve with additional lemon wedges and a drizzle of olive oil.

For optimal flavor, let the fish marinate for at least 30 minutes before roasting.
