Description
A heartwarming dish of crispy smashed potatoes drizzled with olive oil and topped with crumbled feta, embodying the flavors of Greece.
Ingredients
Scale
- 2 pounds Yukon Gold or red potatoes
- 1 cup crumbled feta cheese
- 1/4 cup extra virgin olive oil
- 4 cloves fresh garlic, minced
- 2 tablespoons freshly squeezed lemon juice
- 1/4 cup fresh herbs (oregano, dill, or parsley)
- Salt and pepper, to taste
Instructions
- Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
- Drain and cool the potatoes slightly.
- Preheat your oven to 400°F (200°C).
- Smash each potato with a fork or potato masher, creating a rustic look.
- Drizzle olive oil over the smashed potatoes and season with garlic, salt, and pepper.
- Roast the potatoes on a baking sheet lined with parchment for 20-25 minutes until golden and crispy.
- In the last 5 minutes of roasting, sprinkle feta on top to soften and melt.
- Remove from the oven, drizzle with lemon juice, and toss in fresh herbs.
- Serve hot and enjoy!
Notes
Be careful not to over-smash the potatoes to retain some texture. Switching the oven to broil in the last minute can achieve extra crispiness.
