Ingredients

  • 2 pounds Yukon Gold or red potatoes
  • 1 cup crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 4 cloves fresh garlic, minced
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup fresh herbs (oregano, dill, or parsley)
  • Salt and pepper, to taste

Instructions

  1. Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
  2. Drain and cool the potatoes slightly.
  3. Preheat your oven to 400°F (200°C).
  4. Smash each potato with a fork or potato masher, creating a rustic look.
  5. Drizzle olive oil over the smashed potatoes and season with garlic, salt, and pepper.
  6. Roast the potatoes on a baking sheet lined with parchment for 20-25 minutes until golden and crispy.
  7. In the last 5 minutes of roasting, sprinkle feta on top to soften and melt.
  8. Remove from the oven, drizzle with lemon juice, and toss in fresh herbs.
  9. Serve hot and enjoy!

Notes

Be careful not to over-smash the potatoes to retain some texture. Switching the oven to broil in the last minute can achieve extra crispiness.
