A flavorful and tender chicken dish marinated in creamy Greek yogurt, garlic, and herbs, perfect for summertime dinners.


Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 1 cup Greek yogurt
  • 3 minced garlic cloves
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Herbs and spices (oregano, thyme, paprika)
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, and your choice of herbs and spices. Whisk until well mixed.
  2. Place chicken in a resealable bag or dish, pour the marinade over it, and ensure each piece is well coated. Seal or cover and marinate in the fridge for at least 2 hours or overnight.
  3. Preheat oven to 400°F (200°C) or prepare your grill.
  4. Remove chicken from marinade, letting excess drip off, and place it on a baking tray or grill.
  5. Bake for 25-30 minutes or grill for 6-7 minutes per side until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for a few minutes before serving, garnished with fresh herbs and olive oil.

Notes

For best flavor, marinate overnight. Use a meat thermometer to ensure the chicken doesn’t dry out.
