Description

Delicious and customizable Green Chili Hatch Burritos filled with smoky chiles, tender protein, and gooey cheese.


Ingredients

  • Flour tortillas (or corn tortillas for a gluten-free option)
  • Hatch green chiles (fresh or canned)
  • Protein of choice (shredded chicken, ground beef, shredded pork, or black beans)
  • Monterey Jack cheese and sharp cheddar (or pepper jack for extra heat)
  • Onions (diced)
  • Garlic (minced)
  • Cumin
  • Paprika
  • Salt and pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat a skillet over medium heat and drizzle some olive oil. Add diced onions and minced garlic and sauté until translucent.
  3. Add your chosen protein and cook through, about 5-7 minutes for chicken or beef, or heat black beans gently.
  4. Stir in Hatch green chiles and spices, cooking for another couple of minutes.
  5. Fill tortillas with the mixture, sprinkle cheese on top, and roll them up snugly.
  6. Place burritos seam-side down in a baking dish, top with more cheese and drizzle of sauce if desired.
  7. Cover with foil and bake for 15 minutes, then remove foil and bake for another 10 minutes until golden.
  8. Let cool for a few minutes before slicing and serving.

Notes

Customize with different proteins or a vegetarian option. Serve with avocado salad or sour cream.
