Description
Delicious and customizable Green Chili Hatch Burritos filled with smoky chiles, tender protein, and gooey cheese.
Ingredients
- Flour tortillas (or corn tortillas for a gluten-free option)
- Hatch green chiles (fresh or canned)
- Protein of choice (shredded chicken, ground beef, shredded pork, or black beans)
- Monterey Jack cheese and sharp cheddar (or pepper jack for extra heat)
- Onions (diced)
- Garlic (minced)
- Cumin
- Paprika
- Salt and pepper
Instructions
- Preheat your oven to 350°F (175°C).
- Heat a skillet over medium heat and drizzle some olive oil. Add diced onions and minced garlic and sauté until translucent.
- Add your chosen protein and cook through, about 5-7 minutes for chicken or beef, or heat black beans gently.
- Stir in Hatch green chiles and spices, cooking for another couple of minutes.
- Fill tortillas with the mixture, sprinkle cheese on top, and roll them up snugly.
- Place burritos seam-side down in a baking dish, top with more cheese and drizzle of sauce if desired.
- Cover with foil and bake for 15 minutes, then remove foil and bake for another 10 minutes until golden.
- Let cool for a few minutes before slicing and serving.
Notes
Customize with different proteins or a vegetarian option. Serve with avocado salad or sour cream.
