Instructions

  1. Prepare the Pineapple: Slice the pineapple into thick rounds, removing the core.
  2. Grill the Pineapple: Preheat the grill to medium-high and lightly oil the grate. Grill pineapple slices for 4-5 minutes per side until grill marks appear.
  3. Make the Coconut Cream: Whisk together coconut cream, honey or maple syrup, vanilla extract, and lime juice. Adjust the sweetness to taste.
  4. Serve: Remove grilled pineapple from the grill and drizzle with coconut cream. Optional: add lime zest.
  5. Garnish and Enjoy: Top with mint leaves or toasted coconut flakes for added flavor.

Notes

For variations, you can use peaches or plums in place of pineapple. Adjust the coconut cream with coconut milk if needed.
