Ingredients

- 1 lb fresh shrimp, deveined and peeled
- 2 ripe avocados, diced
- 1 cup corn (fresh or frozen)
- 1/4 cup fresh lime juice
- 1/2 red onion, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
- Optional: chili powder, paprika, or diced jalapeños for heat
Instructions
- Marinate shrimp in olive oil, lime juice, garlic, and spices for 30 minutes.
- Grill the shrimp on medium-high heat for 2-3 minutes per side until pink and opaque.
- In a large bowl, combine diced avocado, corn, red onion, and cilantro.
- Dress the salsa with lime juice, olive oil, salt, and pepper. Mix gently.
- Add grilled shrimp to the salsa mix and toss gently to combine.
- Let the dish rest for 15-20 minutes before serving to allow flavors to meld.
