Ingredients

  • Red bell pepper
  • Yellow bell pepper
  • Green bell pepper
  • Zucchini
  • Portobello or cremini mushrooms
  • Cherry tomatoes
  • Red onion
  • Eggplant
  • 1/4 cup olive oil
  • 3 cloves minced garlic
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Metal or wooden skewers (soaked in water if wooden)

Instructions

  1. In a small bowl, combine olive oil, minced garlic, balsamic vinegar, dried oregano, salt, and pepper. Whisk together until blended.
  2. Chop the bell peppers, zucchini, mushrooms, and other vegetables into 1-2 inch pieces.
  3. Toss the chopped vegetables in the marinade, ensuring they’re well-coated and let them marinate for at least 30 minutes.
  4. Thread the marinated veggies onto the skewers, alternating colors and types.
  5. Preheat the grill to medium-high heat.
  6. Grill the skewers for about 10-12 minutes, turning occasionally until veggies are charred and tender.
  7. Remove from grill and let rest for a few minutes before serving.

Notes

For added protein, consider substituting chicken or shrimp along with the vegetables, or use tofu for a vegetarian option.
