  • 1 cup mushrooms, whole or halved
  • 2 tablespoons olive oil

  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • Fresh herbs (e.g., rosemary or thyme)
  • Wooden or metal skewers

Instructions

  1. In a bowl, whisk together olive oil, minced garlic, salt, pepper, and herbs to make a marinade.
  2. Chop vegetables into uniform pieces, about 1-2 inches, for even cooking.
  3. Toss the chopped vegetables in the marinade and let them soak for at least 30 minutes.
  4. Thread the marinated veggies onto skewers, alternating colors and textures.
  5. Preheat the grill to medium-high heat.
  6. Grill the skewers for about 10-15 minutes, turning occasionally until tender and slightly charred.
  7. Once done, remove from the grill, let cool slightly, and serve hot with optional fresh herbs or a squeeze of lemon.

Notes

Soak wooden skewers in water for 30 minutes to prevent burning. Avoid overcrowding the skewers for even cooking.
