- 1 cup Granulated sugar
- 1 cup All-purpose flour
- 1 tsp Baking powder
- 1 tsp Vanilla extract
- 1 tbsp Matcha powder or green food coloring
- 8 oz Cream cheese
- 1 cup Heavy whipping cream
- 1 cup Powdered sugar
- 1 tsp Vanilla extract (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- In a large bowl, beat the eggs with granulated sugar until light and fluffy, about 5 minutes.
- Sift together the flour, baking powder, and matcha powder or food coloring; gently fold this mixture into the whipped egg mixture.
- Spread the batter evenly in the prepared pan and bake for 12-15 minutes, until a toothpick comes out clean.
- Carefully invert the cake onto a dusted kitchen towel and roll it up to cool completely.
- Whip the heavy cream until soft peaks form; in another bowl, blend cream cheese, powdered sugar, and vanilla until smooth, then fold in the whipped cream.
- Unroll the cooled cake, spread the filling, and re-roll carefully.
- Wrap in plastic wrap and refrigerate for at least an hour.
- Dust with powdered sugar before slicing and serve chilled.
