A festive and vibrant cheeseball inspired by Dr. Seuss’ Grinch, perfect for holiday gatherings.
Ingredients

- 8 oz cream cheese, softened
- 1 cup sharp cheddar cheese, shredded
- 2 green onions, chopped
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh dill, chopped
- 1–2 drops green food coloring (optional)
- Assorted crackers and vegetable sticks for serving
Instructions
- Let the cream cheese sit at room temperature for about 30 minutes.
- In a large bowl, beat the cream cheese until smooth and gradually add the sharp cheddar cheese.
- Stir in the green onions, garlic, fresh herbs, and any spices desired.
- Form the mixture into a ball or mound on a serving platter. Cover and refrigerate for at least 1 hour.
- If using, mix in green food coloring until desired hue is achieved.
- Serve with assorted crackers and veggie sticks, garnished with additional herbs if desired.
Notes
For added crunch, include chopped nuts or seeds as a topping. Let the cheeseball sit out for a bit before serving for best flavor.
