- 1 package (3.4 oz) pistachio pudding mix
- 2 large eggs
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda

- 1 cup semi-sweet chocolate chips
- 1 tsp almond extract
- Holiday sprinkles for decoration
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the pistachio pudding mix and eggs, one at a time, beating well after each addition.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture until just combined.
- Fold in the chocolate chips and holiday sprinkles.
- Scoop dough onto prepared baking sheets, leaving space between cookies. Bake for 10-12 minutes until edges are lightly golden.
- Let cookies cool on the tray for a few minutes before transferring to a wire rack.
Notes
For dairy-free, use a vegan butter substitute; for gluten-free, almond flour can be used instead of all-purpose flour.
