  • 1 package (3.4 oz) pistachio pudding mix
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 1 tsp almond extract
  • Holiday sprinkles for decoration

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the pistachio pudding mix and eggs, one at a time, beating well after each addition.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture until just combined.
  5. Fold in the chocolate chips and holiday sprinkles.
  6. Scoop dough onto prepared baking sheets, leaving space between cookies. Bake for 10-12 minutes until edges are lightly golden.
  7. Let cookies cool on the tray for a few minutes before transferring to a wire rack.

Notes

For dairy-free, use a vegan butter substitute; for gluten-free, almond flour can be used instead of all-purpose flour.
