Instructions
- Preheat your oven to 325°F (165°C). In a medium bowl, combine crushed graham crackers and melted butter. Mix until evenly coated and press firmly into the bottom of a muffin pan lined with paper liners. Bake for about 10 minutes until golden and let cool.
- In a large bowl, beat the softened cream cheese until smooth and creamy. Gradually add sugar and mix until incorporated. Add mint extract and lime juice, mixing until smooth. Beat in the eggs one at a time until well combined.
- Spoon the cheesecake mixture into the cooled crusts, filling each liner about three-quarters full.
- Bake in the oven for about 20 minutes, or until set around the edges. Allow cooling in the pan for 5-10 minutes, then transfer to a wire rack to cool completely.
- Refrigerate for at least 3 hours. Top with whipped cream and crushed mint candies or sprinkles before serving.
