Instructions

  1. Rinse 1 cup of fresh spinach and blanch it in boiling water for 1 minute. Drain and rinse with cold water; chop finely.
  2. In a large bowl, combine 1 cup of all-purpose flour, 1 tablespoon of baking powder, and 1 teaspoon of cinnamon. Mix well.
  3. In another bowl, whisk together 1 cup of milk, 1 beaten egg, and 1 teaspoon of vanilla extract. Stir in the chopped spinach.
  4. Pour the wet mixture into the dry ingredients, stirring gently until just combined.
  5. Heat a non-stick skillet over medium heat and lightly grease with butter or oil. Pour 1/4 cup of batter onto the skillet. Cook for 2-3 minutes or until bubbles form, then flip and cook for another 2 minutes until golden brown.
  6. Stack the pancakes and serve warm with your favorite toppings.
