Ingredients

  • 1 lb ground beef
  • 3 cups cooked day-old rice
  • 3 tablespoons soy sauce (low-sodium recommended)
  • 1 cup mixed vegetables (peas and carrots)
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 2 green onions, chopped
  • 2 eggs
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the ground beef, breaking it apart as it cooks. Season with salt and pepper, and cook until browned. Remove and set aside.
  2. In the same pan, add another drizzle of oil if needed, then toss in the garlic and onions. Sauté until fragrant and the onions become translucent.
  3. Stir in the peas and carrots next, cooking until tender but still bright in color.
  4. Add the day-old rice, breaking apart any clumps. Stir everything thoroughly to combine.
  5. Return the beef to the pan, then drizzle in your soy sauce. Mix well, letting the rice absorb all those wonderful flavors.
  6. Push the rice mixture to one side of the skillet, crack the eggs into the other side, and scramble until cooked. Combine with the rice mixture.
  7. Finally, stir in the green onions and a splash of sesame oil. Taste and adjust seasoning as necessary.
  8. Serve immediately, garnished with additional green onions if desired.

Notes

For a lighter version, swap ground beef for ground turkey or chicken. For vegetarian options, use crumbled tofu or tempeh.
