- 1 lb ground beef
- 3 cups cooked day-old rice
- 3 tablespoons soy sauce (low-sodium recommended)
- 1 cup mixed vegetables (peas and carrots)
- 2 cloves garlic, minced
- 1 medium onion, diced
- 2 green onions, chopped
- 2 eggs
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the ground beef, breaking it apart as it cooks. Season with salt and pepper, and cook until browned. Remove and set aside.
- In the same pan, add another drizzle of oil if needed, then toss in the garlic and onions. Sauté until fragrant and the onions become translucent.
- Stir in the peas and carrots next, cooking until tender but still bright in color.
- Add the day-old rice, breaking apart any clumps. Stir everything thoroughly to combine.
- Return the beef to the pan, then drizzle in your soy sauce. Mix well, letting the rice absorb all those wonderful flavors.
- Push the rice mixture to one side of the skillet, crack the eggs into the other side, and scramble until cooked. Combine with the rice mixture.
- Finally, stir in the green onions and a splash of sesame oil. Taste and adjust seasoning as necessary.
- Serve immediately, garnished with additional green onions if desired.
Notes
For a lighter version, swap ground beef for ground turkey or chicken. For vegetarian options, use crumbled tofu or tempeh.
