Guava Roll Cake – Soft, Fruity & Tropical-Licious!

Description

A delightful soft sponge cake filled with guava puree, reminiscent of summer and family gatherings.


Ingredients

  • 1 cup guava puree
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together eggs and sugar until pale and fluffy. Add melted butter and vanilla extract, mixing well.
  3. Gently fold in sifted flour, baking powder, and salt until combined.
  4. Fold in the guava puree gently.
  5. Pour the batter onto the prepared baking sheet, smoothing it into an even layer.
  6. Bake for 12-15 minutes until the cake springs back when pressed.
  7. Let it cool for a minute, then turn it onto a kitchen towel dusted with powdered sugar. Roll tightly and allow to cool completely.
  8. Beat together softened cream cheese with sugar and guava puree for the filling.
  9. Once the cake is cool, unroll it and spread the filling, then reroll without the towel.
  10. Wrap in plastic wrap and refrigerate for at least an hour before serving.
  11. Slice and enjoy!

Notes

For dairy-free, substitute coconut oil for butter and use whipped coconut cream for filling.
