Description
A delightful soft sponge cake filled with guava puree, reminiscent of summer and family gatherings.
Ingredients

- 1 cup guava puree
- 4 large eggs
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, whisk together eggs and sugar until pale and fluffy. Add melted butter and vanilla extract, mixing well.
- Gently fold in sifted flour, baking powder, and salt until combined.
- Fold in the guava puree gently.
- Pour the batter onto the prepared baking sheet, smoothing it into an even layer.
- Bake for 12-15 minutes until the cake springs back when pressed.
- Let it cool for a minute, then turn it onto a kitchen towel dusted with powdered sugar. Roll tightly and allow to cool completely.
- Beat together softened cream cheese with sugar and guava puree for the filling.
- Once the cake is cool, unroll it and spread the filling, then reroll without the towel.
- Wrap in plastic wrap and refrigerate for at least an hour before serving.
- Slice and enjoy!
Notes
For dairy-free, substitute coconut oil for butter and use whipped coconut cream for filling.
