Ingredients

  • 1 can (14.9 oz) Guinness stout
  • 2 large onions, chopped
  • 4 cloves garlic, minced
  • 4 large carrots, sliced
  • 4 potatoes (Yukon gold or red), chopped
  • 2 cups beef broth
  • 3 tbsp flour
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Oil for browning

Instructions

  1. Brown the Beef: In a large pot or Dutch oven, heat oil over medium-high heat. Sear the beef until all sides are browned. Remove and set aside.
  2. Sauté the Aromatics: In the same pot, add chopped onions, garlic, and carrots. Sauté until the onions become translucent, about 5 minutes.
  3. Add Flour for Thickness: Sprinkle flour over the sautéed veggies, stirring continuously to coat.
  4. Pour in the Ale: Deglaze with Guinness, scraping the bottom. Stir in beef broth, herbs, and the browned beef. Bring to a gentle simmer.
  5. Let It Simmer: Cover and let the stew simmer on low heat for 2 to 3 hours, stirring occasionally.
  6. Finish with Potatoes: 30 minutes before serving, add chopped potatoes until fork tender.
  7. Taste and Adjust: Before serving, taste and season with additional salt, pepper, or stout as desired.
