- 2 lbs beef (chuck or brisket), cut into cubes
- 1 can (14.9 oz) Guinness stout
- 2 large onions, chopped
- 4 cloves garlic, minced
- 4 large carrots, sliced
- 4 potatoes (Yukon gold or red), chopped
- 2 cups beef broth
- 3 tbsp flour
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper to taste
- Oil for browning
Instructions
- Brown the Beef: In a large pot or Dutch oven, heat oil over medium-high heat. Sear the beef until all sides are browned. Remove and set aside.
- Sauté the Aromatics: In the same pot, add chopped onions, garlic, and carrots. Sauté until the onions become translucent, about 5 minutes.
- Add Flour for Thickness: Sprinkle flour over the sautéed veggies, stirring continuously to coat.
- Pour in the Ale: Deglaze with Guinness, scraping the bottom. Stir in beef broth, herbs, and the browned beef. Bring to a gentle simmer.
- Let It Simmer: Cover and let the stew simmer on low heat for 2 to 3 hours, stirring occasionally.
- Finish with Potatoes: 30 minutes before serving, add chopped potatoes until fork tender.
- Taste and Adjust: Before serving, taste and season with additional salt, pepper, or stout as desired.
- Serve and Enjoy: Ladle stew into bowls and enjoy with family and friends.
