Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 1 can (14.9 oz) Guinness stout
  • 2 medium onions, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, chopped
  • 4 cups low-sodium beef broth
  • 3 medium potatoes, diced
  • 2 teaspoons fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Oil for searing

Instructions

  1. In a large pot, heat oil over medium-high heat and sear the beef chunks until golden brown on all sides. Remove and set aside.
  2. Sauté onions, carrots, and celery in the same pot for about 5 minutes, then add minced garlic and cook for an additional minute.
  3. Deglaze the pot with Guinness, scraping up any browned bits. Let simmer for 1 minute.
  4. Return the browned beef to the pot. Add beef broth, potatoes, thyme, bay leaves, and season with salt and pepper.
  5. Bring the stew to a gentle boil, cover, and reduce heat. Simmer for 1.5 to 2 hours, stirring occasionally.
  6. Adjust seasoning if necessary and thicken if desired before serving. Ladle into bowls and serve hot.
