- 1 3/4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup boiling water
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix the oil, eggs, and vanilla extract. Pour this mixture into the dry ingredients, stirring gently.
- Carefully stir in the boiling water until combined.
- Spoon the batter into the lined muffin tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow the cupcakes to cool completely on a wire rack before frosting.
- Decorate with royal icing or colorful buttercream.
Notes
For a healthier option, substitute coconut oil for vegetable oil. You can also use unsweetened applesauce or mashed bananas as an egg replacement.
