Description

Deliciously rich chocolate cupcakes perfect for Halloween, decorated with spooky frosting and fun toppings.


Ingredients

  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix the oil, eggs, and vanilla extract. Pour this mixture into the dry ingredients, stirring gently.
  4. Carefully stir in the boiling water until combined.
  5. Spoon the batter into the lined muffin tin, filling each cup about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow the cupcakes to cool completely on a wire rack before frosting.
  8. Decorate with royal icing or colorful buttercream.

Notes

For a healthier option, substitute coconut oil for vegetable oil. You can also use unsweetened applesauce or mashed bananas as an egg replacement.
