  • 2 potatoes, diced
  • 1 can diced tomatoes
  • 4 cups beef or vegetable broth
  • Salt and pepper, to taste
  • Fresh parsley, thyme, or dried Italian seasoning, to taste
  • 1 tablespoon Worcestershire sauce (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and garlic, sauté until translucent and fragrant.
  2. Add the ground beef and brown it, breaking it apart with a spoon. Drain excess fat if necessary.
  3. Add chopped carrots, bell peppers, and any other desired vegetables. Sauté for a few minutes until softened.
  4. Pour in the broth and add the canned tomatoes; stir and bring to a simmer.
  5. Season with salt, pepper, and Worcestershire sauce, and let simmer for 20-30 minutes.
