- 1 lb lean ground beef
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 1 bell pepper, chopped
- 2 potatoes, diced
- 1 can diced tomatoes
- 4 cups beef or vegetable broth
- Salt and pepper, to taste
- Fresh parsley, thyme, or dried Italian seasoning, to taste
- 1 tablespoon Worcestershire sauce (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onions and garlic, sauté until translucent and fragrant.
- Add the ground beef and brown it, breaking it apart with a spoon. Drain excess fat if necessary.
- Add chopped carrots, bell peppers, and any other desired vegetables. Sauté for a few minutes until softened.
- Pour in the broth and add the canned tomatoes; stir and bring to a simmer.
- Season with salt, pepper, and Worcestershire sauce, and let simmer for 20-30 minutes.
- Before serving, stir in fresh herbs and adjust seasoning as needed. Ladle into bowls and enjoy.
