Ingredients

  • 23 cloves garlic, minced
  • 2 tablespoons fresh ginger, minced
  • 6 cups chicken or vegetable broth
  • 1 package rice noodles
  • Vegetables (carrots, bell peppers, mushrooms)
  • Fresh herbs (basil or cilantro)
  • 23 tablespoons low-sodium soy sauce or tamari
  • Lime wedges and chili flakes for garnish

Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat. Add garlic and ginger; sauté until fragrant, about 2 minutes.
  2. Pour in the broth and bring it to a gentle simmer.
  3. Add in the vegetables and let them cook in the broth.
  4. Drop in the rice noodles and cook according to package instructions, about 4-5 minutes.
  5. If using, add chicken or tofu to the pot before serving.
  6. Season with soy sauce or tamari, and finish with fresh herbs before serving hot.
  7. Garnish with lime wedges and chili flakes if desired.
