Ingredients

- 2–3 cloves garlic, minced
- 2 tablespoons fresh ginger, minced
- 6 cups chicken or vegetable broth
- 1 package rice noodles
- Vegetables (carrots, bell peppers, mushrooms)
- Fresh herbs (basil or cilantro)
- 2–3 tablespoons low-sodium soy sauce or tamari
- Lime wedges and chili flakes for garnish
Instructions
- In a large pot, heat a tablespoon of olive oil over medium heat. Add garlic and ginger; sauté until fragrant, about 2 minutes.
- Pour in the broth and bring it to a gentle simmer.
- Add in the vegetables and let them cook in the broth.
- Drop in the rice noodles and cook according to package instructions, about 4-5 minutes.
- If using, add chicken or tofu to the pot before serving.
- Season with soy sauce or tamari, and finish with fresh herbs before serving hot.
- Garnish with lime wedges and chili flakes if desired.
