Ingredients

- 1 cup rolled oats
- 1/2 cup almonds, chopped
- 1/2 cup walnuts, chopped
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1/3 cup almond butter (or peanut butter)
- 1/4 cup honey (or maple syrup)
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine rolled oats, chopped nuts, seeds, cinnamon, and salt; mix well.
- In another bowl, mix nut butter, honey (or maple syrup), and vanilla extract until smooth.
- Pour wet ingredients into dry mixture and stir until fully combined.
- Scoop dough onto a lined baking sheet, flatten slightly.
- Bake for 12-15 minutes, until edges are golden and center is set.
- Cool cookies on the sheet for a few minutes before transferring to a wire rack.
Notes
For a vegan version, substitute honey with agave syrup. Store in an airtight container for up to a week, or freeze for up to three months.
