Delicious and nutritious cookies packed with nuts and seeds, perfect for a healthy snack or dessert.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup almonds, chopped
  • 1/2 cup walnuts, chopped
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/3 cup almond butter (or peanut butter)
  • 1/4 cup honey (or maple syrup)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine rolled oats, chopped nuts, seeds, cinnamon, and salt; mix well.
  3. In another bowl, mix nut butter, honey (or maple syrup), and vanilla extract until smooth.
  4. Pour wet ingredients into dry mixture and stir until fully combined.
  5. Scoop dough onto a lined baking sheet, flatten slightly.
  6. Bake for 12-15 minutes, until edges are golden and center is set.
  7. Cool cookies on the sheet for a few minutes before transferring to a wire rack.

Notes

For a vegan version, substitute honey with agave syrup. Store in an airtight container for up to a week, or freeze for up to three months.
