Instructions
- Prepare the Zucchini: Wash and grate zucchini, then squeeze out excess moisture using a clean kitchen towel.
- Mix the Ingredients: In a large bowl, combine grated zucchini, chopped onion, minced garlic, herbs, and eggs. Mix well, then gradually fold in breadcrumbs and cheese if using.
- Season: Taste and add salt, pepper, and any additional spices as desired.
- Cook the Fritters: Heat a skillet over medium heat, add olive oil, and scoop 1/4 cup of mixture per fritter. Flatten slightly and cook for 3-4 minutes on each side until golden brown.
- Draining: Transfer cooked fritters to a plate lined with paper towels to absorb excess oil.
