Ingredients

  • 1 lb beef (chuck roast or flank steak)
  • 8 oz wide egg noodles
  • 4 cups beef broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 tsp fresh thyme
  • Salt and pepper to taste
  • Optional: sautéed mushrooms, parsley for garnish

Instructions

  1. Trim excess fat from the beef and cut into 1-inch cubes. Season with salt and pepper.
  2. Heat oil in a large pot over medium-high heat. Sear beef in batches until brown, about 3-4 minutes; set aside.
  3. In the same pot, sauté onions and garlic until tender and fragrant, about 2-3 minutes.
  4. Deglaze the pot with a splash of beef broth or red wine.
  5. Add diced carrots, celery, and optional mushrooms; cook for 3-4 minutes until softened.
  6. Return beef to the pot, add remaining broth and thyme. Bring to a boil, then simmer on low for 1.5 to 2 hours until beef is tender.
  7. Boil salted water in a separate pot, cook egg noodles according to package instructions, drain and set aside.
  8. Once beef is fork-tender, stir in the cooked noodles and adjust seasoning to taste. Serve with chopped parsley on top.

Notes

For a leaner option, replace beef with chicken or use zucchini noodles for a low-carb alternative.
