- 1 lb beef (chuck roast or flank steak)
- 8 oz wide egg noodles
- 4 cups beef broth
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tsp fresh thyme
- Salt and pepper to taste
- Optional: sautéed mushrooms, parsley for garnish
Instructions
- Trim excess fat from the beef and cut into 1-inch cubes. Season with salt and pepper.
- Heat oil in a large pot over medium-high heat. Sear beef in batches until brown, about 3-4 minutes; set aside.
- In the same pot, sauté onions and garlic until tender and fragrant, about 2-3 minutes.
- Deglaze the pot with a splash of beef broth or red wine.
- Add diced carrots, celery, and optional mushrooms; cook for 3-4 minutes until softened.
- Return beef to the pot, add remaining broth and thyme. Bring to a boil, then simmer on low for 1.5 to 2 hours until beef is tender.
- Boil salted water in a separate pot, cook egg noodles according to package instructions, drain and set aside.
- Once beef is fork-tender, stir in the cooked noodles and adjust seasoning to taste. Serve with chopped parsley on top.
Notes
For a leaner option, replace beef with chicken or use zucchini noodles for a low-carb alternative.
