Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 3 carrots, chopped
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear the beef chuck on all sides until browned.
  2. Remove the beef from the pot and set aside. In the same pot, sauté the onions, carrots, and celery until softened, about 5-7 minutes.
  3. Add minced garlic and sauté for an additional minute.
  4. Return the beef to the pot and add broth, red wine, tomato paste, thyme, and bay leaves. Bring to a simmer and cover, reducing heat to low.
  5. Let the stew cook for at least 2-3 hours, stirring occasionally.
  6. About 30 minutes before serving, add diced potatoes. Adjust seasoning before serving.

Patience is key; allow the stew to simmer for a rich depth of flavor. Serve with fresh parsley and crusty bread.
