Ingredients

- 2 lbs beef chuck, cut into chunks
- 3 carrots, chopped
- 2 potatoes, diced
- 1 onion, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear the beef chuck on all sides until browned.
- Remove the beef from the pot and set aside. In the same pot, sauté the onions, carrots, and celery until softened, about 5-7 minutes.
- Add minced garlic and sauté for an additional minute.
- Return the beef to the pot and add broth, red wine, tomato paste, thyme, and bay leaves. Bring to a simmer and cover, reducing heat to low.
- Let the stew cook for at least 2-3 hours, stirring occasionally.
- About 30 minutes before serving, add diced potatoes. Adjust seasoning before serving.

Patience is key; allow the stew to simmer for a rich depth of flavor. Serve with fresh parsley and crusty bread.
