  • 8 oz lasagna noodles, broken into pieces
  • 2 cups fresh spinach
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • 2 tsp Italian seasoning
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Add the onion and garlic, and sauté until fragrant and translucent, about 3-4 minutes.
  2. Stir in the ground meat and cook until browned, breaking it apart for even texture.
  3. Add mushrooms and cook until softened, then stir in the tomato sauce and diced tomatoes.
  4. Pour in the broth and bring to a gentle simmer. Season with Italian herbs and let simmer for 10-15 minutes.
  5. Add lasagna noodles and simmer gently for 10-12 minutes until the noodles are al dente.
  6. Stir in fresh spinach until wilted, then mix in ricotta cheese until creamy. Top with mozzarella and let melt before serving.
  7. Ladle soup into bowls and sprinkle with fresh parsley.
