- 1 lb ground beef or turkey
- 1 onion, diced
- 3 cloves garlic, minced
- 8 oz mushrooms, chopped
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef or vegetable broth
- 8 oz lasagna noodles, broken into pieces
- 2 cups fresh spinach
- 2 tsp dried basil
- 1 tsp dried oregano
- 2 tsp Italian seasoning
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
Instructions
- In a large pot, heat a splash of olive oil over medium heat. Add the onion and garlic, and sauté until fragrant and translucent, about 3-4 minutes.
- Stir in the ground meat and cook until browned, breaking it apart for even texture.
- Add mushrooms and cook until softened, then stir in the tomato sauce and diced tomatoes.
- Pour in the broth and bring to a gentle simmer. Season with Italian herbs and let simmer for 10-15 minutes.
- Add lasagna noodles and simmer gently for 10-12 minutes until the noodles are al dente.
- Stir in fresh spinach until wilted, then mix in ricotta cheese until creamy. Top with mozzarella and let melt before serving.
- Ladle soup into bowls and sprinkle with fresh parsley.
