- 1 lb Italian sausage (or ground beef)
- 8 oz lasagna sheets (or other pasta)
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 8 oz cremini mushrooms, chopped
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 4 cups chicken or vegetable broth
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 bell pepper, chopped
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat, then add chopped onions and sauté until translucent.
- Add minced garlic and sauté for another minute.
- Include the ground sausage (or chosen protein) and cook until browned.
- Add the chopped mushrooms and bell peppers, sautéing until softened.
- Stir in the diced tomatoes, tomato sauce, and broth, bringing to a gentle simmer.
- Fold in the herbs and red pepper flakes, if using.
- Let it simmer for about 20-30 minutes.
- Just before serving, add in the pasta, allowing it to cook in the hot soup.
- Stir in the cheeses until melted and incorporated.
- Taste and adjust seasonings as needed.
Notes
